pantsblazing:
flavor synergies

<< home

There are certain flavor combinations that yield a new flavor that seemingly comes from nowhere. This is an attempt to create a comprehensive repository of such combinations. If you know of any that aren't listed here, have any scientific information that can explain this phenomenon, of if any of these combinations don't produce the same results for you, please let me know!

the list
Coffee and raw asparagus makes coffee taste sweet. (Thanks Nadia!)
Eating Keebler Orignal Club crackers after smoking a pipeful of Orlik Golden Sliced tobacco ("Smoked By All Shrewd Judges") makes the crackers taste like kippers.
Drinking a glass of water at a certain restaurant I used to work at (which tastes just fine on its own or with anything else) while smoking a cigarette (any brand) produces a citrusy but otherwise indescribable and unpleasant flavor with an intensely astringent mouthfeel.
Rice and applesauce tastes like apple pie. (Thanks Avalondaughter!)
Cinnamon-caramel ice cream tastes like pumpkin.
Fried Twinkies and Shiner Bock beer tastes like acetone. (Thanks truffle!)
Lightly smoked salmon or gravlax with frisee tossed with very light olive oil and crème fraiche and a glass of cold Rose wine from the south of France like Chateau Grande Cassagne Rose (Costiere de Nimes) will leave your mouth tasting of strawberries. (Thanks Tom!)
Lime juice on broccoli and avacado tastes like artichoke in lemon butter. (Thanks Mike!)
...flavor that come after two certain specialty cocktails at a trendy bar in Boston called the Blue Cat Cafe. I ordered the Cherry Lifesaver, and a friend of mine ordered the Blue Cat Cosmo. A sip of the Cherry Lifesaver first, then a sip of the Blue Cat Cosmo, and my taste buds perked up at the metallic lavendar taste. (Thanks Susan!)
Carrots in blue cheese dips tastes like coconut (if you avoid the blue cheese chunks). (Thanks Hannah!)
Honorable mention for smell: Warm crème brûlée mix (cream, sugar, and egg yolks) infused with lemongrass and galanga smells exactly like Kellogg's Froot Loops cereal (though it doesn't taste like it when served).
Honorable mention for taste/smell association: jackfruit tastes like Juicy Fruit chewing gum smells. (Thanks Joanna!)

impressionistic
Vanilla Häagen-Dazs ice cream topped with salted pistachios and a drizzle of [real] maple syrup tastes like the first day of winter. (Thanks Mike!)
Strawberries sauteed in butter with balsamic tastes like Paris. (Thanks Grelf!!)
